                   RECIPE
ALOO GOBI
(Serves 3)
Ingredients
• 2 medium potatoes (peeled and cut into cubes)
• 2 cups cauliflower florets (about 180g)
• 3/4 cup finely chopped onion
• 1/2 cup finely chopped tomato
• 1 green chilli (chopped)
• 1 tbsp ginger garlic paste
• 2 tbsp finely chopped coriander leaves
• 1/2 tsp salt
• 2 tbsp oil
• 1/2 tsp cumin seeds
• 1/4 tsp turmeric
• 1 tsp garam masala
• 3/4 tsp coriander powder
• 1 tsp red chilli powder
• 1 tsp dried fenugreek leaves (kasuri methi)
Method
1. Heattheoilinapan.
2. Addcuminseeds.Whenthecuminstartstosizzle,addthe
ginger garlic paste and lightly fry for half a minute.
3. Addintheonions,greenchilliandpotatoesandlightlyfry
for about 2-3 minutes.
4. Coverthepanandleaveuntilthepotatoesarehalfcooked.
5. Addinthecauliflowerandcontinuefryingfor3minutes.
6. Addinturmeric,garammasala,corianderpowderand
red chili powder. You can adjust the amount of red chilli
powder according to your taste.
7. Mixwell.
8. Addsaltandleavethecoveredpanonlowflameuntilthe potatoes are soft and you can easily pierce them with a fork. The cauliflower should still be slightly crunchy and not overly soggy.
9. Addthetomatoes.Crushedthefenugreekleavesand sprinkle over the pan. Lightly mix in the tomatoes and fry over medium heat for 3-4 minutes.
10.Garnish with coriander leaves and serve the dish hot with rice or bread.
